Chocolate Coffee Cake ~ Cream Cheese Frosting



3/4 cup coco unsweetened

2 tsps baking soda

1 tsp baking powder

3 cups sugar

2 eggs

8 oz cream cheese (softened) 4 0z for cake batter /4 oz for frosting *

4 tbsp butter (softened)

2 tsp ( +) vanilla

1 – 2 oz espresso shot with heavy whipping cream to lighten

heavy whipping cream

2 cups flour



1/2 cup sugar white or powder

dash cream

4 oz soft cream cheese



oven 350F

cream together sugar, vanilla, 4 oz cream cheese, butter and coco powder, add eggs and about 2 oz espresso shot, blend together well

mix dry ingredients well, then add to cream mixture

(add cream if needed for correct cake batter viscosity, i added dash probably less than 1/2 oz)

beat at high speed for probably 2 minutes with electric mixer (did mine with hand mixer and not enough mixing left middle of cake collapse)

pour into grease/floured cake pans round or flat your choice

made mine 9 x 13 flat pan baked 30 minutes @ 350 … 2 smaller round cake pans would take less time, would check around 15-18 minutes


soften cream cheese add dash vanilla and 1/2 cup sugar (white or powder)

dash cream

beat till whipped … white sugar makes more of glaze like frosting, add little more cream and can drizzle onto double round

*might need more cream cheese frostingΒ  for double round, was just enough for flat cake

cake is very rich, not too sweet … good stuff 1/2 is gone already here πŸ™‚

    was just reading comments, and saw the cofee
    you know i dont drink cofee, nor cakaw (spelled it right?) not even tea or soda or cocacola, or such unless people insist
    i only love water and juice (prefere natural) πŸ™‚

    • just leave it out then, add maybe 1 tbsp vegetable oil and more plain heavy cream in place of coffee or espresso shot πŸ˜‰
